Family-Pleasing Meatballs

1 pound lean ground beef
10 reduced-fat ritz crackers, crushed
1 egg white
1/4 t pepper

Mix all ingredients together. Form into 12 2-inch balls. Bake at 375 for 20 minutes.

After baking, meatballs can be frozen on cookies sheets and then transferred into bags for future use.
